Local coffee story
Specialty coffee in Denver
Denver's specialty coffee culture grew alongside the city's craft food and drink businesses. Local roasters built a market for seasonal coffee in the 2000s, and rapid neighbourhood growth later gave those ideas a much wider audience.
How the scene took shape
Novo Coffee, founded in 2002 by Jake, Joseph and Herb Brodsky, is one of the city's early modern specialty anchors. Its roasting and café work helped make farm identity, careful extraction and barista education more visible in Denver. A larger group of independent roasters followed through the late 2000s and 2010s, each drawing different lessons from West Coast and mountain-state coffee culture.
The coffee scene today
The city now offers strong coffee around downtown, RiNo, Capitol Hill and many residential districts. Roaster-cafés are prominent, while multi-roaster bars, bakery cafés and inventive seasonal drinks have added range. The atmosphere is generally informal even when the brewing is exacting.
