Local coffee story

Specialty coffee in Toronto

Toronto's specialty culture developed neighbourhood by neighbourhood, building on the city's many immigrant café traditions. By the late 2000s, micro-roasters and independent bars were giving origin, freshness and barista technique a much larger public stage.

How the scene took shape

There is no single uncontested first, but May 2009 is a useful landmark. Andy Wilkin and Jessie Holmes opened Te Aro Roasted in a former Leslieville car garage, inspired by Wellington's café culture. The company became Pilot Coffee Roasters in 2013 and helped supply, train and equip a growing network. Contemporaries across the west end and downtown made the movement broader than any one roaster.

The coffee scene today

Toronto now has a large, varied market: production roasters, minimalist brew bars, bakery cafés and shops rooted in particular diasporas. Strong pockets exist across the east and west ends, while single-origin espresso and filter coffee have become common well beyond the early specialty neighbourhoods.
