Local coffee story

Specialty coffee in Sydney

Sydney's coffee culture combines an older migrant-led espresso tradition with a specialty movement that became increasingly confident from the late 1990s. Its geography produced many local scenes rather than one dominant café district.

How the scene took shape

Italian and Greek cafés established espresso as a daily habit long before specialty terminology arrived. A clear modern milestone came in 1997, when Toby Smith started Toby's Estate from a garage after travelling through coffee-growing regions. Campos and later Single O were among the businesses that also raised expectations around roasting, sourcing and barista work in the following years.

The coffee scene today

Sydney now ranges from high-volume espresso bars to tiny shops built around rotating filter coffees. The CBD, Surry Hills, Marrickville and the wider inner west remain influential, but good independent coffee extends across the metropolitan area. The common thread is fast, polished service without giving up technical care.
