Local coffee story

Specialty coffee in Melbourne

Melbourne's specialty coffee scene rests on a much older espresso culture shaped by post-war Italian migration. The city later became a proving ground for small roasters, serious barista craft and the all-day neighbourhood café.

How the scene took shape

Italian-run cafés and espresso bars made coffee a defining part of Melbourne life decades before the term “third wave.” The specialty phase emerged through several businesses rather than one uncontested founder. Mark Dundon developed roasting ventures from 2001 and established Seven Seeds in 2007; ST. ALi opened in South Melbourne in 2005. Together with other early operators, they helped make origin, freshness and preparation central to the conversation.

The coffee scene today

Melbourne now offers nearly every expression of specialty coffee, from fast flat whites to competition-style espresso, batch brew and rare filter lots. The culture is dispersed through the CBD, inner north, west and south, and its legacy is as much about hospitality and independent café design as it is about roasting.
